Korean Food for vegetarians

Dear luna,
I was wondering what I could Substitute for most of the meat in these dishes because Im vegetarian but, I would still love to cook some of these dishes at home.. for example, Im pretty sure instead of chicken stock, I could use a vegetarian broth that almost imitates it.. would that effect the taste???? thanks for all the help

Hi Ananda

You can substitute most ingredients if you are a vegitarian, certainally Vegetable stock would be fine and would not make much difference. In terms of the meats you could either use more vegetables or use meat substitutes like quorn or Tofu etc.

The best advice I can give is to make the Korean sauces and then put them with ingredients you would use on a regular basis.
