Pan fried Courgette Jeon

Chuseok is a Korean harvest festival and is the most popular festival in the Korean calendar when families spend much time together and cook lots of food for this occasion.

It’s a time for family gatherings and great food, one popular dish served often is Jeon made with vegetables, fish or meat. They are a quick and easy to make as a side dish and can be served with rice and any meat dishes.

 I have used the following ingredients:

  • 1 small green Courgette/ ½ medium yellow courgette
  • 2 medium eggs
  • 100g of flour
  • 2-3 small red chillies
  • Salt for seasoning
  • Soy sauce, sugar, sesame oil and chilli powder for dipping sauce. (See Chapsal Bulgogi recipe for dipping sauce recipe)

Preparation

Start by cutting the courgette into thin slices about 5mm -7mm

Place them on a kitchen towel to dry them out and sprinkle some salt on them.

Once dried, coat each slice with flour.

Whisk 2 eggs in a small bowl and dip each piece of courgette in the whisked egg

Cooking

To cook, put oil in a pan and put on full heat

Fry in a pan until lightly brown on each side

Decorate on top with sliced red chilli if you like spice and want a bit of a kick.

Eating

Serve as a side dish with rice and other main dishes.

The Jeon taste great dipped in soy sauce.
